Peter is a multi-award winning hospitality leader with global experience in Australia, The Pacific Islands and the Middle East (United Arab Emirates). 

Peter's experience stems from an ability to establish highly successful food and beverage and hotel concepts with an emphasis on team development, high value guest experiences and events, innovative food and beverage concepts and sustainable business models. 

He is an avid learner and allocates a lot of his spare time to developing new skills.

Overseeing five hospitality venues across SE Queensland, I manage accommodation, restaurants, bars, gaming, of each property and nine liquor retail stores. My role includes risk and compliance oversight, financial management, business strategy, and operational leadership.

 

Key responsibilities:

• Venue Operations & Compliance: Ensuring seamless operations, adherence to liquor, gaming, and safety regulations, and mitigating risks.

• Financial & Business Strategy: Managing budgets, driving profitability, and identifying growth opportunities.

• Liquor Retail & Events: Overseeing nine liquor retail stores, curating special events and entertainment to enhance patron experience.

• Leadership & Development: Supporting venue managers to ensure strong performance, staff retention, and continuous improvement.

General Manager, Eatons Hill Hotel (Brisbane)

2021 - 2024

Eatons Hill Hotel is a food, beverage and entertainment mecca located just 25 minutes north of Brisbane CBD. Named as Australia's Best Hotel for 2022 and inducted into the Hall of Fame for entertainment after winning Australia's Best Entertainment Venue three years in a row, Eatons Hill Hotel is well-known for hosting some of the world's biggest talent including Prince, Good Charlotte, Ty Dolla $ign, Rita Ora, Post Malone, Khalid and more.

 

An industry leader in entertainment, dining and leisure, Eatons Hill Hotel is a one stop shop for business and pleasure; boasting over 16 function spaces, 9 bars, a restaurant, kids playground, nightclub, gaming room, retail precinct, 3 bottle shops, a distillery and a luxury 4.5 star boutique accommodation building offering a range of room-types catering to both leisure and corporate stays.

Some of the regular events at Eatons Hill include music festivals, boxing tournaments, The Australian Poker Tour, Rodeo, The Brisbane Beer Festival and more.

 

General Manager, Hotel Esplanade (Melbourne)

2021 

3 Restaurants, 12 Bars, and 3 stages, Hotel Esplanade is one of Melbourne's largest F&B operations. Home to the popular Mya Tiger and Espy Kitchen Restaurants, Ghost cocktail bar and the famous Gershwin Band Room, The Espy is a village in it's self. 

 
General Manager, Zero Gravity (Dubai)

As opening general manager of Zero Gravity, Peter has overseen the the multi-stage expansion of the business from a small beach side restaurant to one the regions largest food, beverage and entertainment venues with a capacity of up to 7000. Employing 120 full time staff, Zero Gravity is one of the most highly awarded F&B operations in the region and hosts a plethora of events including music festivals, outdoor cinemas and several of the most successful regular day-parties in Dubai. 

 

 

General Manager, Accenture Investment and Entertainment - Al Habtoor Group (Dubai)

​2011 - 2013

 

​Accenture Investments and Entertainment is the private holding company for the hospitality investments of the CEO and Vice Chairman of the Al Habtoor Group. When Peter joined Accenture as General Manager, its only asset was Horizon Lounge and Bar. Peter expanded the portfolio to include the popular XL Beach Club, Summer Place Oriental fusion restaurant, Villa Romana Saint Tropez (Now Andreas Beach) and Top Shelf Beverages - a beverage distribution company. 

 

 

Manager, Barasti Beach (Dubai)

​2008 - 2011

 

World renowned Barasti Beach is the highest grossing F&B operation in the Starwood/Marriott group and arguably the busiest bar in the Middle East. Split into several different and unique areas, Barasti offers a terraced restaurant overlooking it's own private beach complete with a permanent stage for large scale events, a swimming pool and seven high volumes bars. Named the worlds best bar in 2009, Barasti is an institution of the Dubai social scene.

Food and Beverage Director, Sonaisali Island Resort (Fiji)

​Sonaislai Island Resort in Fiji is located just of the island of Nadi. Peter was responsible for 2 restaurants, 2 bars, a jungle themed nightclub, banqueting and room service. 

Food and Beverage Manager, Opal Cove Resort (Coffs Harbour, NSW)

​2003 - 2007

Opal Cove Resort is located in the coastal town of Coffs Harbour Australia. Peter worked across front office, night audit and as the food and beverage manager overseeing the main restaurant, 2 bars, banqueting and room service.

​Peter has completed the Harvard Business School certificate Entrepreneurship Essentials in July of 2020. The course covers four main units of study. Idea's and Opportunities, Building a business, Financing a Business and Sources of Investment. 

 

Cornell University - Leadership Essentials 

​2019 - 2020

 

Completed the seven part Leadership Essentials certificate program with Cornell University with two elective subjects in Planning and delivering effective presentations and leading strategic change initiatives. The core subjects covered becoming a powerful leader, building high performance teams, interpersonal communication skills, managing team performance, managing time and priorities, effective hiring and interviewing and assessing workplace behavior issues. 

Cornell University - Hotel Real Estate and Asset Management 

2019

 

Completed the Cornell University certificate program in Hotel Real Estate Investments and Asset management. The certificate program focus on six main areas of study. Financial Analysis of Hotel Investments, Control of Hotel Real Estate, Developing an Asset Management Strategy, Achieving Hotel Asset Management Objectives, Valuing Hotel Investments Through Effective Forecasting and Valuing Hotel Intellectual Property and Structuring the Capital Stack. 

SAE Institute Dubai - Social Media and Digital Marketing

2018

 

Completed the certificate program in Social Media Marketing at the SAE Institute Dubai in 2018. The course covered a wide range of topics such as social media follower generation, brand positioning on social media, use of social media for products promotion and services as well as an introduction to organic followship and managing presence in other social media sites.

2017​

 

Completed two certificate programs with SAE Institute Dubai. The first focusing on the complete professional production process: from the development of visual concepts, project planning, to the design implementation in industry-standard software. The Web Design certificate program focused on the basic programming required for web design including HTML and CSS programming.  

Academy Sofitel Melbourne - Advanced Diploma of Hospitality Management (Scholarship)

2002-2003

​Awarded the Leader Newspaper scholarship to attend Academy Sofitel in Melbourne Peter earned his Advanced Diploma of Hospitality Management in 2003.
